Fluffy Chocolate Chip Blondies

One of the most transformative things I did when it came to my diet is cut back on sugar, dairy and grains. That's where these soft chocolate chip blondies come in. They are made with almond flour which is a great grain-free alternative. They are also sweetened with monk fruit sweetener, which is a natural, zero-calorie sweetener that won't spike your blood sugar. Additionally, they are dairy-free, which makes them suitable for those who are lactose intolerant or who are avoiding dairy for other health reasons.

Despite being free of these common allergens and candida triggers, these blondies are still delicious and satisfying. They are soft and fluffy, with just the right amount of sweetness and chocolatey goodness. Ingredients:

  • 1/2 cup almond flour

  • 1/3 cup sugar free chocolate chips (I used Lily’s chocolate)

  • 1/3 cup monk fruit or stevia sweetner (if you aren’t following the Candida diet you can use coconut sugar)

  • 1 tsp baking soda

  • 1/2 cup almond butter

  • 1 tsp vanilla extract

  • 2 tbsp olive oil

  • 2 eggs

  • Salt (measure with your heart <3) or roughly 1/2 tsp

Instructions:

Preheat the oven to 350 degrees fahrenheit. Mix ingredients together in a medium bowl. Line a 8x8 baking dish with parchment paper (don’t forget parchment paper). Pour ingredients into the dish and smooth it out evenly to the edge. Bake in the oven for 20-25 minutes. You can always stick a toothpick in the middle and if it comes out clean that means its ready.
